Frozen Strawberry Lemonade Pie Recipe

This strawberry lemonade pie that you can freeze might be the best summer dessert ever.

For the Crust: 12 graham cracker sheet 2 tablespoons sugar 5 tablespoons unsalted butter, melted For the Filling: 1 cup chopped strawberrie 1/2 cup raspberrie 1/4 cup sugar  1 tablespoon water 4 ounces cream cheese, at room temperature 3/4 cup sweetened condensed milk  1 tablespoon finely grated lemon zest plus 1/3 cup fresh lemon juice (from 2 to 3 lemons)  1 cup cold heavy cream For the Topping: 3 tablespoons strawberry jelly 1 cup strawberries, halved

Start with a 350-degree oven. Finely grind graham crackers and sugar in a food processor. Add melted butter and process until wet sand-like. Press into a 9-inch fluted tart pan bottom and sides.

Bake 12–14 minutes on a baking sheet until lightly browned and set. Cool fully on the baking sheet. Meanwhile, create filling: Boil strawberries, raspberries, sugar, and water in a small saucepan over medium-high heat.  

Simmer for 4–5 minutes until the juice is syrupy and the fruit is tender. Press gently on the solids with a rubber spatula to strain through a fine-mesh sieve; discard. Allow syrup to cool.  

Soften stiff cream cheese in 10-second increments in the microwave. Mix the cream cheese in a large bowl on medium-high speed for 30 seconds until smooth. Add condensed milk and beat well.

Berry syrup, lemon zest, and juice should be mixed until smooth.  Use clean beaters to whip heavy cream until medium peaks form in a large bowl.   

Use a rubber spatula to gently incorporate the whipped cream into the cream cheese mixture until streak-free. Spread filling into crust with back of spoon. Wrap in plastic and freeze for 4 hours.   

Remove the pie from the freezer 10 minutes before serving to soften. Make the topping: First microwave the jelly in a medium microwave-safe basin for 20–30 seconds, then whisk until smooth.   

Stir strawberries lightly to coat. Macerate 10–15 minutes. Plate the tart after removing it from the pan. Put strawberry mixture on top.
